Private Network for Noisy Conference

Hi there, I am presenting a new mobile web application at a conference next week and I know that it is likely to be a noisy electronic environment with a poor internet connection. I have a web server running on a laptop and I would like to connect a wireless access point to it and direct mobile traffic connected to that local network to my server. So far all good if I am using a local network IP address all is good.
Alongside website access I also have a Cordova app that has the final domain bound into it so it is a little more difficult to connect to a local IP from this app. If I set up the access point to use simpleDNS running on the laptop as it's DNS then am I able to filter out requests to final.domain.com and point them to the web server, also running on the laptop through a local IP address?

Yes, you can certainly do that.
You can setup a zone for "final.domain.com" and add an A-record to this with the IP address of the local website.
Simple DNS Plus will automatically resolve any other DNS requests over the Internet, so you can have access to both this site and the Internet in general.
